I say that because the most famous lectin in bread is gluten. Do you know that gluten is a substance that causes illness in people with celiac disease, and not only gluten in the bread? Most bread is just basically pure refined carbohydrates; one thing that everybody knows is that sugar boom is really bad for our body, and sugar is a combination of two sugars that is glucose and fructose; fructose is the fruit sugar, and when we eat starch, we usually process it into a fine powder so we can digest it easier, but unfortunately, when it becomes easier in digestion, the sugar will go to your bloodstream easier if you know the glycemic index table, then you will know that glycemic index of the white bread is 70 – 100, so this is very high and bad for us, it is basically instant sugar (sucrose/table sugar), you should care about the glycemic index, why is it important? So, if you compare it with a teaspoon of sugar, most of the bread has four teaspoons of sugar per slice, which means whenever you eat a sandwich, it is equivalent to eight teaspoons of sugar.
Some breads are bad for you.
Number one is sprouted bread. Why is it bad? Because when the seed sprouts, it is very easy vulneable and the lectin contains in the sprout increasing so much to protect it, you should remember that lectins are the plant defense system to defeat the seed eaten, so if you don’t care about lectins and sugar boom, then just try it.
The second is whole grain bread; the problem is here, you know wheat, rye, barley, oats, rice…have a lectin called wheat germ agglutinin, and it is one of the mischievous lectin discovered; why? Because wheat germ agglutinin is very small, it can be easily absorbed through the wall of the gut without the presence of gut leakage; here is the interesting thing that you should know: gluten is a very large lectin, and it cannot be absorbed without leaky gut, so, don’t be confused that gluten causes leaky gut, then it allows the gluten to be absorbed into your bloodstream, but, wheat germ agglutinin can be absorbed without leaky gut. Wheat germ agglutinin, when it comes to your bloodstream, will find the sugar molecules to attach to. These sugar molecules in the lining of our blood vessels are called glycocalyx to protect our body, so now wheat germ agglutinin becomes an alien protein when it sticks to the lining of our blood vessels. Our immune system will attack this protein. It becomes a leading cause of heart disease, dementia, leaky brain, and arthritis. So, we are trying to remove this wheat germ agglutinin to avoid these diseases.
Wheat germ agglutinin also attaches to the insulin receptor on fat cells, changing the insulin receptors and contributing to fat accumulation.
For these reasons, I think it is enough for you to avoid whole grains, especially whole bread.
